EDFIL: HANDMADE BEER WITH LOVE IN PIEDMONT
Located in a panoramic position between the Nizza Valley and the Valtiglione Valley, the Silvia
Castagnero Agricultural Craft Brewery was born within the farm, in 2012 in Regione Dogliano, a small hamlet of Agliano Terme, a spa center in the heart of the Asti area renowned for its salty-magnesium waters and for Barbera.
The idea of adding beer as an integral part of agricultural production comes from Silvia Castagnero, her husband Daniele and her brother Giovanni. The production of the beer is instead entrusted to Silvia and Daniele’s son-in-law: Gabriele Ormea. Gabriele is an expert and multi-award-winning Master Brewer, who in 2018 led the brewery to rank 3rd in the Beer of the Year competition, organized by the Unionbirrai Association, for the category “Low-fermented, low-alcohol-inspired light beers German and Czech”.
THE PRODUCTION
Edfil beers are agricultural and artisanal, made with a percentage of barley produced on the farm ranging from a minimum of 80% to 100%: for this very purpose, Silvia has reserved over two hectares of the family property for the cultivation of this cereal.
For the production of beers, in addition to barley, only raw materials of the highest quality are used – such as hemp, chestnut honey or grape must – most of which, are produced or grown on the farm, at most acquired in the immediate district.
Edfil Beers are handmade with love, in Piedmont. Each step of the brewing process (milling, mashing, boiling, fermentation and bottling) is performed “in-house”: only the malting of the barley is outsourced to Cobi (Italian Consortium of Barley and Beer Producers), a cooperative of farmer-brewers from the Marche region.
Edfil Beers are unfiltered and unpasteurized, of Belgian, German, Anglo-Saxon and American inspiration, although particular attention is paid to exceptional ingredients such as hemp or grape must, always made from grapes grown on the farm.
In addition to the brewery, Silvia and her husband Daniele also own a farm dedicated to the production of wine and the “C’era Una Volta” (Once Upon a Time) farm-restaurant/hotel.
